Egg Roll in a Bowl (minus the egg)

This is a delicious recipe that has become a go-to in our household. It is fairly simple to make and I typically have 8 out of the 12 ingredients on hand at all times in my kitchen!
The recipe has all the makings of an egg roll minus the fried outside. Despite it’s name, there is actually no egg in this recipe either! For someone who is allergic to eggs and gluten (and dairy and brewers/bakers yeast and cocoa and tarragon, etc.) this is an awesome way to have the taste without the allergic reactions!
Tips:
- If you don’t have a coleslaw mix available, make your own by slicing up some carrots and green/red cabbage!
- Check and make sure you have all the ingredients before you get started! Just because you usually have them on hand doesn’t mean you always do.
- If you want to spice things up, increase the amount of ginger or Sriracha in the recipe!
- Coconut aminos can be substituted with soy sauce. Soy sauce is typically saltier than coconut aminos so I would recommend adding less.
