AIP “Nachos”

Alright, these aren’t really nachos in the traditional sense but I would argue that they are better! Not only do they taste delicious, but they are packed full of healthy, anti-inflammatory ingredients that make your body feel so good.

Throughout my AIP journey, this was one of my go-to meals. My husband was not doing AIP with me but he still RAVED about these “nachos.” We even made them when we had people over for dinner and they were a hit. In fact, this is a recipe that we still make even though I am done with AIP.

NOTE: I finished AIP and now know what my body reacts to so I stick to a diet that does not inflame my body.

For this recipe, you will actually refer to two other recipes that I have posted about previously. Instead of regular corn chips (no corn chips on AIP!), you make some delicious plantain chips. You will also be making the AIP guacamole recipe. If you are not following the auto-immune paleo diet, you can skip this step and use store bought guacamole if you want!

It really is a super simple recipe and quite delicious! It also reheats well if you have leftovers.

Tips

  • Divide and conquer: If you have two people making this recipe, assign one person to the plantain chips (they aren’t hard to make but they take the longest to make in this recipe) and assign the other person to chopping and cooking the meat.
  • Be smart with your time: If you are working by yourself, get started on the plantain chips first! While they are on the stove, you can be prepping the guacamole and other toppings for the nachos.
  • Keep it warm: If you have an oven and are willing to use it, turn it to warm (or low heat depending on your oven). Throw the ground beef or plantain chips in there if your not ready to immediately serve them when you’re done. This way, everything will stay warm!
