Plantain “Chips”
Something I indulged in before starting AIP was chips and salsa. I probably ate chips and salsa at least 3 times per week. It was just so easy (not to mention yummy). Unfortunately, due to the restriction of corn (chips) and tomatoes, I had to find some other snack to enjoy.
It can be a struggle to find AIP compliant snacks. While this recipe does take some time to make, it is SO worth it.
This is when I found plantain chips. I was skeptical at first, but after making them I realized they are delicious! They are not quite as quick as grabbing a bag of chips, but I would say it is worth the time.
Tips:
- The ripeness of the plantain matters! To get a more chip-like plantain, opt for the really green ones. However, it’s important to know the the greener the plantain, the less sweet the chip will be. I personally like my plantain to be a little bit more ripe. I typically will choose plantains that do not have a lot of brown on them yet and maybe just a hint of green. Too brown though and it will be more like mush than a chip. Try out the different ways to see which one you prefer!
- If you don’t have parchment paper, aluminum foil will work just fine!
- When making the plantain pieces into “chips,” it is best to move the spoon in a circular motion until you get the desired shape and size
- Try it with the AIP Guacamole!
